Judy,

If your man truly served under Capt. McDonald, it would appear that he was not there long enough to be recorded on any of the surviving documents. A search of the NPS Soldiers and Sailors database for West men in the 11th Tenn. Cav. (Holman's) reveals only three men:
D.K. West in Company K
J.B. West in Company L
W.H. West in Company E
It's possible that the reference you found in Kentucky is the only one that puts him in that unit.
