An English Ibbitson reseacher has told me that the name, like my Lund surname, is of Scandinavian origin and either dates back to the Vikings who raided along the North Sea coast of England and Scotland 1000 years ago, or the Danes who came later. The many spelling variations are of the same origin - there is no "right" version. It is of the common Scandinavian "son of Ibit" derivation. He believes the name has survived more in its original form in Britain as it does not appear now in Scandinavia, where it has become shortened to "Ibsen".
