Constable John Dove - 1841

Hello fellow researchers!

Have found a record stating that John C. Dove was the Constable of Fayette county, Tn in 1841. Does anyone know or have access to records of Fayette co during that timeframe?
Where would I start to look for tax records of that time?

I found a John C. Dove - (spelled) Dover on the 1840 census of Fayette co, Tn - who is the right age for the family I'm looking for. And the children fit the age ranges as well. It appears his wife was somewhat older.
The 1850 census of Titus county, Texas listed:
John Dove 35 years b. Tn - and
Mrs. Dove 46 years b. NC - who appears to have d. 1850-60
and the children
A son, Theophilus A. Dove noted b. Fayette co, TN in 1850

On the 1860 census of Cooke co, Tx. listed:
John C Dove 47 years b. TN
Harriet 40 years b. AL maiden name: Broadwater
d/o Charles Broadwater b. 1790 SC and Harriett unkn

John Carrol Dove b. 10 Oct 1812 Tennessee
------------------d. 18 Aug 1877 Cooke county, Tx.
married 1st - unknown
married 2nd - Harriett Broadwater (and there was a Charles Broadwater who lived for a time in Fayette co, Tn circa 1820-30s.)

Hoping to backtrack John C. Dove in Tennessee!! Any help deeply appreciated!
